This is something that's still kinda confusing me- Enterprise takes place BEFORE all the other series on the timeline? Is that correct?

Yes, that is correct!

Enterprise takes place in the mid-22nd century, a little over 100 years before TOS; and all the other shows take place after TOS. Being set that early in the Star Trek timeline, Enterprise depicts some of the events that lead to the foundation of the Federation in 2161 (in which Cpt. Archer was one of the driving forces).

Having watched all other series (with the exception of Voyager) before Enterprise, and being a history nerd, I found it interesting to see a lot of “Star Trek history” in Enterprise. If you want to know more, I suggest looking up the show on Memory Alpha.
